When we start talking about offering a variety of assignments, we start getting into the issue of evaluation and grading. I am sure many dread the idea of generating multiple rubrics to evaluate the variety of products.
In response, there are a handful of great rubric generators available online. Most include, not only the ability to create a rubric, but also huge databases of rubrics alread made by other teachers. You will be able to adapt and change existing rubrics in most of the programs, so you can start with someone else's work and tailor it to your needs.

The top dog in my opinion. Easy to search database with a gazillion rubrics for all types of assignments and all types of content. You can create your own rubric from scratch, but it would almost be foolish not to at least find a prefab rubric to start with and tailor it to your needs. Don't be afraid to start specific in your search (i.e. gettybsurg journal, rather than civil war journal or war journal). No promises, but there is a lot available.

The real catch is that you can set up your classes on here to have work submitted electronically, you can grade electronically and it will calculate the grade, and there are even areas that mimic traditional online classes. There is upfront work that should be done to really get the most out of this tool, such as entering your roster, but it does have a lot of neat features.
